Head Chef: Seiji Jin

Dedicated to the culinary arts throughout his career, Seiji Jin spent eight years mastering the art of Kaiseki cuisine at the renowned Gora Kadan in Hakone, eventually becoming head chef at a prestigious Hakone ryokan.

With a refined ability to select the finest ingredients, cultivated through years of experience, the chef is driven by a passion to showcase the rich bounty of his hometown, Yamanashi, to a wide audience.

Kōshū Beef: Yamanashi’s Pride in Premium Wagyu

Raised with meticulous care in a pristine natural environment blessed with pure water, Kōshū Beef is a black-haired wagyu of exceptional quality. Only cattle graded A4 or A5 in meat quality rankings earn this distinguished name, a testament to the advanced breeding techniques of skilled producers.

Fujinosuke: A Rare Fish Nurtured by Fuji’s Pristine Waters

Fujinosuke is an original Yamanashi creation, a rare fish bred by crossing the finest King Salmon with Yamanashi’s rainbow trout. As the only fish in Japan with King Salmon lineage, Fujinosuke boasts a delicate texture, a refined layer of rich yet subtle fat, and a clean, full-bodied flavor.

Often featured in the media, the renowned Shinazawa Fish Farm raises Fujinosuke in a natural-like environment using pure river water, ensuring unmatched quality and sustainability.

Kikuchi Wasabi Farm: Committed to Organic Cultivation Since the Taisho Era

Kikuchi Wasabi Farm has upheld a dedication to organic farming methods since the Taisho era. Its wasabi is nurtured with the pristine waters recognized as one of the Heisei Meisui Hyakusen (Top 100 Famous Waters of the Heisei Era).

Characterized by a refreshing spiciness without bitterness and a robust aroma, this exceptional wasabi can be enjoyed with sashimi or in wasabi rice dishes, offering a truly unique flavor experience.

Yamanashi’s Premier Domestic Wine: CUVÉE MISAWA

Grapes cultivated at an elevation of 700 meters, surrounded by mountains, benefit from Japan’s highest sunshine hours and a cool, elevated climate, creating an exceptional grape material suitable for producing the finest wines.

The cultivation of grapes uses no herbicides or chemical fertilizers, ensuring high-quality grapes with a natural touch.

CUVÉE MISAWA has garnered international acclaim, notably when “CUVÉE MISAWA Akeno Koshu 2013” won a Gold Medal at the 2014 Decanter World Wine Awards, marking the first time a Japanese wine achieved this honor.
